Baked Chicken with Onions, Garlic & Rosemary

Position a rack in the center of the oven. Preheat the oven to 400 degrees F.

6 pieces of skinless chicken (rinse, pat dry & season w/salt & pepper)

In a bowl, mix together:

1 large onion cut into rings
6 cloves of garlic thinly sliced
2 tablespoons of olive oil
2 teaspoons dried rosemary, crumbled
(or 4 teaspoons minced fresh rosemary)

Spread half the mixture on the bottom of your roasting pan or shallow baking dish. Place chicken pieces in pan or dish forming a single layer. Spread remaining mixture over chicken and drizzle with another 2 tablespoons of olive oil.

Bake the chicken covered for 55 minutes.
